Pul Biber

Flakes of medium-hot chilli - Turkey's favourite seasoning. Also known as Aleppo or Alaby Pepper pul biber is an excellent way of adding heat to a dish as an alternative to black pepper. We use it instead of black pepper wherever we're also using herbs, on salads, in tomato sauce-based casseroles, with chicken and with lamb. In Turkish pul means flake and biber is 'pepper' as in capsicum. The name sounds exotic but Turkish is a very no-nonsense language!

Ingredients: Dried capsicum, vegetable oil (2%)
