When we first started out in business we were 'drying things'; herbs, fruit, vegetables. Then we were given a packet of Italian 'risotto pronto' - delicious ingredients - all dried - to which you simply add water and simmer for 15 or so minutes. We made one up using onion, carrot, celery and red pepper we'd dried ourselves, added seasonings and stock powder and it was good! From there we took our risottos to Bridport market and so the business was born. That was in 2005 and we're still making top-notch risotto pronto from Arborio rice with stock and seasonings using recipes that are close to traditional Italian recipes.
